I am conjecturing on the basis of what I have read from Hills, and this leads me to think that while the alteration in Psalm 22 is of one letter, that it was indeed purposeful, and that the Jews who rejected Christ would have tried to do all types of things like this to make it appear as if Christ had not fulfilled prophecies.
The DSS must mainly date BC, so we know that the correct text was there, and contemporary with Christ. The major (appearing to be very very slight) corruptions in Hebrew must have come in later, for example, around time of Aquila (who was working into Greek). One might question why Aquila made a new translation when the LXX was current. Was it because the LXX had been taken by many Christians to prove that Christ fulfilled OT prophecies? Therefore some thought to make a new translation into Greek to tone this down. If that happened in translation, and we know from Calvin and Hills that it happened in at least one place in the Hebrew, then it is very likely that certain Jews tried to do this or introduce other corruptions in other places too.
In science (so I was taught) one can come up with a hypothesis and begin to see if any facts support it. Then it becomes a theory. Since there is a theory that already exists that says that some Jews did tamper with the Hebrew text (Calvin, Hills), then I would be within the bounds of that theory if I said, the Jews also would have tried to tamper with other obvious Messianic prophecies too. I would think that either in the main text or in the critical apparatus as supplied by Bomberg, that there would be either major Hebrew readings or minor Hebrew readings/notes/commentary which were also deliberately added, that were preserved in the Masoretic tradition, which were essentially anti-Christian.
I note that there are LXX fragments from other parts of the OT besides Moses (e.g. Jeremiah) which are dated to BC.
