Nope.
We know absolutely no such thing.
And I think this myth is the crux of the misunderstanding.

The only verse I have ever seen where this seems to be even a possible consideration for concern is Psalm 22:16. And that is more on the level of the 1 Timothy 3:16 "is that line there" very difficult type of textual variant controversy. And even there much rabbinics and the minority manuscripts of the Masoretic Text preserved the true reading. Just as the true reading of the Johannine Comma and Acts 8:37 were preserved in minority manuscripts. Also the ancient testimony works in both directions, with an ancient Targum possibly supporting the later Jewish variant "lion" but the DSS, by most accounts, supporting "pierced". To make an accusation based on this verse, with its very difficult and complex history, would be utter nonsense.

So putting that aside, please give your basis for the accusation against the Masoretic Text above. And if the Masoretic Text is pure, then clearly any "tampering" was eliminated by scribal fealty to the text by the Jewish scribes.
